Dewberry Hills Farm
Lexington, TX
Jane & Terry taught us what Really Good Chicken tastes like. They are completely passionate about compassionately raised poultry. Dewberry’s chickens are pastured in rotating, open-air pens so the chickens have constant access to fresh grass, which is necessary to develop essential Omega-3 fatty acids that are good for your heart, brain and immune system. Plus, DH Farms is only 50 miles from Austin, which allows us to provide you with the freshest chicken possible.

Richardson Farms
Rockdale, TX
Nothing is more important to Jim Richardson than healthy and happy animals. Jim is a board certified Veterinarian, and he takes great pride in producing the finest quality beef and pork, while being a steward to the land and animals with sustainability always in mind. Their cattle and hogs are free range, grass-fed and never subjected to any growth hormones or antibiotics. In addition to delicious pork and beef, the Richardson’s also raise pastured chickens, eggs and even do a fair amount of produce including fresh corn, popcorn (!), melons and vegetables.

Amador Farms
Dripping Springs, TX
People don’t get much nicer than Susan & Rusty Staub. And lettuce doesn’t get much nicer than the immaculate greens they grow at Amador Farms. Using greenhouses and hydroponics, they produce high quality, pesticide-free lettuces all year-around. Which is good, because we can’t live without them. In addition to Multy (think: if crisp romaine and leafy frisee had a baby…) and tender but hardy Bibb, they also grow a variety of red leaves and Asian greens like Bok Choy, Pac Choi & Tatsoi. We are proud to feature their lettuces in our fresh salads.

Loncito’s Lamb
Dinero, TX
Chances are you’ve seen this man. The self-proclaimed “Lamb Buddha”, Loncito Cartwright is omnipresent at all the markets, always smiling in his signature specs. In his humble town of Dinero, TX, he raises arguably the best darn lamb out there. And we concur. His lamb is downright, Cartwright delicious. Tender, juicy and unctuous with a refined, clean taste. Always grass-fed, always homone and antibiotic free, and always delectable.
Thunderheart Bison
San Antonio, TX
The Fitzsimons family is bringing bison back. Nestled in South Texas on 13,000 acres of grassland, their bison graze freely on native grasses and mesquite beans, just as they did for thousands of years. This in turn produces a red meat like no other: low in fat and cholesterol and high in protein, omega-3’s, selenium (a mood enhancer) and vitamin E. And to top it all of, it is delicious. Try it in our famous Bison Bolognese!
CKC Farms
Blanco, TX
CKC and Dish go way back. Back when Chrissy Omo was just beginning her goat cheese empire, we had the privilege of tasting her inspiring creations at one of her first retail locations. Years later, we are still craving that cheese, and are proud to use it in our delicious dishes. Based in Blanco, TX, CKC Farms produces several fresh and aged goat cheeses, but our favorite is their simple, plain chevre for its clean, always-evolving taste and versatility.
Hairston Creek Farms
Burnet, TX
Hairston Creek produces picturesque produce. They are the source of our beautiful purple, yellow, orange and red bell peppers in the fall, tall and tasty asparagus, green beans & squash in the summer, and greens and root vegetables in the winter. Hairston has been certified organic since 1993.
